Cooked Koginut Squash

  • 1 Koginut squash, halved and seeded

  • 2 tbsp olive oil

  • 4 tbsp unsalted butter

Instructions:
  1. Preheat your oven to 400°F (200°C).

  2. Slice the Koginut squash into wedges, drizzle with olive oil, and season with salt and pepper.

  3. Lay the squash wedges in a cast iron skillet for even roasting and to get that perfectly caramelized finish. Roast for 30-35 minutes, flipping halfway through, until the squash is tender and golden brown.

  4. While the squash is roasting, melt the butter in a small saucepan over medium heat. Add the sage leaves and let the butter cook until it turns golden and smells nutty (about 3-4 minutes).

  5. Remove the roasted squash from the oven and drizzle with the sage brown butter. For an extra touch, drizzle with honey or maple syrup, and enjoy!
