Pasta Dough Ingredients
I know the Italian recipe is 1 egg per 100g but I find here in America that is not always consistent. Maybe its our eggs..eh tho knows...I can't say why but this recipe is foolproof.
2 cups Antimo Caputo Semolina Flour (quality is king and this is worth it!)
4 eggs
Instructions
Attach KitchenAid Dough Hook (or this type hook will work ok too)
Add flour to the KitchenAid mixing bowl leaving a well in the middle for the eggs
Crack the eggs into the well and turn on the mixer to setting 1
Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes. If you are absolutely out of plastic wrap, I leave mine resting in the mixing bowl with a towel over the top.
After resting, divide the dough into smaller portions and roll each portion and feed each portion into the pasta attachment to make a flat sheet. It's ready to cut when you can see your hand through it. Although, if you prefer a thicker noodle, you do you! It will still be super tasty.
Run the sheet thought the desired pasta cutting part of the attachment. My favorite is fettuccine but note that if you go for spaghetti, you're gonna need to go thin for it to cut properly.
Cook the pasta in a large pot of salted boiling water for 2-3 minutes or until al dente. Enjoy with your favorite sauce or toppings! *don't add pasta to the water until its a full rolling boil.
